Ingredients
4 leeks cut into slices
3 cloves of garlic chopped
25g of Butter
2/3 cup of Flour
1/2 cup of polenta
1 1/2 tsp baking powder
Salt and Pepper
1 lemon - zest and juice
1 chopped chilli
150g feta crumbed
4 eggs lightly beaten
100ml milk
200g plain yoghurt
Preheat oven 200 degrees, grease and line tart, loaf or cake tin.
Saute leeks and garlic with butter in a frying pan for about 10min.
In a large bowl whisk all dry ingredients to ensure you don't have any lumps of baking powder and ddd chilli, feta, lemon zest.
In a smaller bowl whisk lemon juice, eggs, milk and yoghurt.
Add wet ingredients to the flour mixture until just combined. Once leeks are cool stir in half of them through the batter. Pour batter into lined tin and add the rest of leeks on top.
Bake for 35-45 minutes, until golden and skewer comes out clean.
